Vegan Cherry Cheesecake Jars

Ingredients
Base
- 5 dates, pitted + soaked in boiling water for 10 mins
- 62ml / 1/4 cup coconut oil, melted
- 165g / 1 cup oat flour
- Good pinch of salt
- 1/3 tsp cinnamon
Filling
- 210g / 1 3/4 cups cashews, soaked overnight or in boiling water for 1 hour, then drained
- 125ml / 1/2 cup full fat coconut milk (from a can)
- 3 tbsp coconut oil, melted
- 2 tbsp maple
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
Cherry Layer
- 300g / 1 pack PACK’D Organic Frozen Cherries
- 1 tbsp maple
Method
Blend all the base layer ingredients together in a high speed blender until it forms a sticky dough. Don’t over blitz just enough to combine. Transfer to a bowl and use your hands to soften into a tacky tough.
Press the base mixture evenly into the bottom of 5 - 6 small jars.
Blend the cashews, coconut milk, coconut oil, maple, lemon juice, zest and vanilla in a high speed blender until super smooth and creamy, at least 1 minute. Taste and adjust sweetness to taste baring in mind you have the base and topping to come.
Pour the cheesecake layer into the jars and level with a spoon
Add the cherries and maple to a small non-stick pan and cook on a medium heat for about 5 minutes or until most of the juice absorbs. Allow to cool to cool to thicken.
Spoon the cherry compote on top of the cheesecake layer. Use a skewer or knife to swirl the layers together to create a slight marble effect if you like.
Place in the freezer for 4 hours or overnight. If the jars totally freeze, simply rest at room temperature to thaw.
Option to top with dark chocolate to serve.
