Sweet potato Tacos

Ingredients
- 1 bag PACK’D Organic frozen Sweet Potato
- 1 tbsp olive oil
- 1 - 1.5 tbsp taco seasoning to taste
- Salt and pepper to taste
- 6 corn or flour tortillas
Toppings
- 1 x 400g tin black beans, drained + rinsed
- 200g guacamole
- 100g red cabbage
- 1/3 cup white vegan Greek feta, crumbled
- 3 tbsp sriracha mayo
- 1 tbsp coriander, finely chopped lime wedges
Method
Preheat the oven to 200C / 180 fan and line a baking tray with parchment paper. Add the sweet potatoes, olive oil , taco seasoning, salt and pepper and toss to combine. Bake for 15 - 20 minutes, stirring once, until soft and tender.
Assemble the tacos. Fill each tortilla (option to char first if you like) with a beans, sweet potatoes, guacamole, red cabbage, vegan feta, mayonnaise, coriander and a squeeze of lime.
