Cherry and Almond Pie
There's something inherently comforting about the delicious aroma of a freshly baked pie wafting through the kitchen, and when that pie is packed with the goodness of PACK’D organic cherries, it becomes an absolute delight. This cherry pie recipe not only promises a burst of fruity flavours but also a generous boost of Vitamin C. So, roll up your sleeves and embark on a baking adventure!
Ingredients
- 1 pack of PACK’D Organic Cherries (300g)
- 1 roll of shortcrust pastry
- 2 tsp cornflour (mixed with 2 tsp water)
- 100g mixed fruit jam (your choice!)
- 2-3 tbsp almond flour (Can swap out for icing sugar if you or anyone else has an allergy)
Method
- Blind bake the pastry base in a pie dish for 15 minutes with baking beans, then without the beans for an extra 5 minutes. Get in nice shape for a crispy top and bottom!
- Combine the cherries, almond flour, cornflour and jam together in a mixing bowl.
- Add the delicious cherry mixture to the baked base.
- Then simply layer on pastry lattices or shapes.
- Glaze the pastry with any plant-milk.
- Bake for 40 minutes.
- Best served warm - Enjoy!
