Spinach Crackers
Introducing our delicious and nutritious Spinach Crackers made with PACK'D organic frozen spinach! These vegan, gluten-free, and refined sugar-free crackers are perfect for healthy snacking.
Quick and easy to make, they are packed with wholesome ingredients like almond flour and flaxmeal. Enjoy them on their own or with your favourite dips and spreads.

Ingredients
- 1 ¼ cups PACK’D organic frozen Spinach
- 2 1/3 cups almond flour
- 1/2 cup flaxmeal
- 2 tbsp olive oil
- 1/3 cup nutritional yeast
- 1/2 tsp flaked sea salt
- 1/4 cup water
Method
Fill a pan with water and bring to a boil over a high heat. Once simmering, add the spinach and cook for 1 minute until wilted. Alternatively, add spinach to a cup of boiled water and allow to stand for 2 - 3 minutes until thawed. Then, strain and squeeze the water out of the leaves.
Place the cooked spinach in a blender or food processor and pulse until almost smooth.
Mix dry ingredients in a mixing bowl: almond flour, flaxmeal, nutritional yeast and salt.
Add the spinach, olive oil and water to the dry ingredients. Using your hands, mix until well combined.
Allow to rest for about 10 minutes or until it’s firm enough to roll. If it firms too much add a touch more water. Place dough between two sheets of parchment paper and roll to about 3 - 4 mm thick. Fold over the edges and keep re-rolling if you want a rectangle shape. Remove top sheet of parchment and place crackers with the parchment underneath on a baking tray.
Using a pizza cutter, cut into crackers.
Preheat the oven to 180C / 160 fan. Bake the spinach crackers for 15 minutes or until slightly golden. For crunchier crackers, reduce the heat to 160C / 140 fan and cook for a further 10 minutes or so. Remove from the oven and allow to cool to firm up.
Perfect for dunking and dipping into houmous.
