Soft and Fluffy Vegan Banana Muffins

Ingredients
- 1½ cups plain flour
- 1/2 cup regular oats
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1/3 cup maple syrup
- 1/3 cup coconut oil, melted
- 1 tbsp flax
- 3 tbsp water
- 2 tsp vanilla extract
- 1 cup PACK’D organic frozen banana slices
- 1/4 cup oat milk
- 1/3 cup chocolate chips
Method
Preheat the oven to 180C / 160 fan.
Add cupcake liners to a muffin tin or use a silicone mould,
Allow frozen banana to thaw on the counter for 5 minutes. Then drain and mash with a fork.
In a mixing bowl, add the flour, oats, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Whisk together.
Mix the flax and water in a cup to form flax egg. Set aside for 10 minutes.
In another clean large bowl, add the maple syrup, banana, coconut oil, flax egg, vanilla extract and oat milk. Whisk together until smooth.
Add the dry ingredients to the wet ingredients and stir until everything is well combined.
Fold in the chocolate chips using a spatula. Option to set aside a few for the top.
Add the batter to the muffin cases, filling 3/4 of the way to the top. Option to top with set aside chocolate chips.
Bake for about 20 minutes, or until a toothpick comes out clean. Allow to cool for 10 minutes to firm up and remove from cases.
