Skin glow sweet potato bowl

Featuring PACK'D organic sweet potato, chickpeas, and avocado, this vibrant bowl is topped with a creamy miso-tahini dressing and crunchy pumpkin seeds. It's a wholesome, plant-based meal that delivers both flavour and skin-boosting nutrients, perfect for a healthy lunch or dinner.
Ingredients (makes 2 servings):
- 80g quinoa
- 250g PACK’D organic sweet potato
- 240g chickpeas
- 2 tbsp olive oil
- 100g red cabbage
- 30g rocket
- 150g PACK’D avocado
- Salt and pepper to taste
For the dressing:
- 1 tsp white miso
- 2 tsp syrup
- 2 tsp sesame oil
- 2 tbsp tahini
- Juice of 1 lime
- 1-2 tbsp water
Toppings:
- Pumpkin seeds (optional)
Method
- Defrost the PACK’D avocado.
- Pre-heat the oven to 220°C.
- Cook the quinoa according to the package instructions.
- Add the PACK’D sweet potato and chickpeas to an oven proof dish and drizzle over the olive oil. Roast for 35-45 minutes, flipping halfway.
- Mix the dressing ingredients. You may need to add more water depending on how creamy you’d like it.
- Assemble the roasted sweet potato and chickpeas in a bowl, along with the rocket, avocado and red cabbage. Drizzle over the dressing and serve!
