Roasted Cheesy Cauliflower Nuggets

These vegan, refined sugar-free nuggets are perfect for any meal or as a tasty appetiser. Ready in just 25 minutes, they're packed with flavour from smoked paprika, garlic powder, and Italian herbs. Serve with your favourite dip for a nutritious and satisfying treat.

Ingredients
- 1 packet PACK’D organic frozen Cauliflower Rice
- 1/2 tsp garlic powder
- 1 tsp smoked paprika
- 1/4 cup nutritional yeast
- 2 cups soft, fresh breadcrumbs
- 1 tbsp flax meal
- 2 ½ tbsp water
- 1 tsp dried Italian herbs
Method
Add the frozen cauliflower to a microwave bowl and microwave for 5 minutes, or place in a bowl of boiling water to thaw for 1 - 2 minutes. Place in a muslin cloth and squeeze out all the excess water. This is very important for the nuggets to hold together.
Add the flax and water to a cup. Stir and set aside for 5 minutes to make a flax egg.
Add the strained cauliflower to a mixing bowl with the spices, seasoning, breadcrumbs, flax egg and stir to combine. Set aside for 5 mins to firm up.
At this stage, the dough needs to be substantial enough to form into nuggets with your hands, but still moist enough to stick to your hands a little.
Preheat the oven to 200C / 180 fan and line a baking tray with parchment paper.
Use your hands to form 1.5 - 2 inch nuggets. If the dough is sticking, oil your hands a little first.
Lightly brush the top of your cauliflower nuggets with olive oil.
Bake until they are starting to brown and crisp up on the edges, about 15 minutes, turning once after 10 minutes. Allow to rest for a couple of minutes before serving.
Serve with your favourite dip.
