- Pinch of salt (if your peanut butter doesn't contain any)
Method
- Add all the ingredients, including the jumbo rolled oats, chia seeds, smooth peanut butter, thawed dates, and a pinch of salt if needed, to a food processor.
- Pulse until all the ingredients are well combined. You should end up with a thick, sticky mixture.
- Now, it's time to get your hands a little messy, but with a delicious payoff! Scoop out small portions of the mixture and roll them into 15 bite-sized balls. Feel free to adjust the size according to your preference.
- While you can certainly enjoy these peanut butter date balls right away, they're even better after a little chill time. Place them in the fridge in an airtight container for up to a week. Chilling helps them firm up and enhances the flavours.
