Organic sweet potato and beetroot salad
Brighten up your plate with this vibrant Organic Sweet Potato and Beetroot Salad. Packed with wholesome ingredients like PACK'D organic sweet potato, roasted beetroot, chickpeas, and fresh herbs, this salad is both nourishing and satisfying. Topped with crunchy walnuts and sweet pomegranate seeds, and dressed in a zesty lemon and herb vinaigrette, it’s a perfect blend of flavours and textures. This salad is not only delicious but also a great source of nutrients, making it ideal for a light lunch or a side dish.
Ingredients (Serves 2)
- 250g PACK’D organic sweet potato
- 1 medium beetroot
- 1 medium red onion
- 200g chickpeas (cooked)
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- 1 tsp paprika
- 2 tbsp olive oil
- 2 tbsp chopped parsley
- 2 tbsp chopped mint
- 50g chopped walnuts
- 6 tbsp pomegranate seeds
Dressing
- 3 tbsp olive oil
- 1 tbsp syrup
- 1/2 tsp salt
- 3 tbsp lemon juice
- ½ tsp oregano
Method
Preheat the oven to 200°C.
Peel and cut the beetroot and red onion and place on a baking tray along with the PACK’D sweet potato. Drizzle with olive oil and season with oregano, cumin, salt, paprika. Roast for 35-40 minutes.
Mix the olive oil, syrup, salt and lemon juice.
In a large bowl, combine the roasted vegetables with the chickpeas, chopped parsley and mint as well as the walnuts and pomegranate seeds.
Drizzle the dressing over the salad and toss to combine.
