- 1 cup jumbo rolled oats (GF if required)
- 2 - 2 1/4 cups almond milk to taste
- Optional: 1 tbsp maple syrup
- 1/8 tsp vanilla extract
- Pinch of salt
- 3/4 cup PACK’D Frozen Organic Raspberries
- 2 tbsp peanut butter (we love Mani LIfe)
Method
- Combine the oats and Almond Milk: In a non-stick pan, combine the jumbo rolled oats and almond milk. Bring the mixture to a simmer, then reduce the heat to medium. If you have a sweet tooth, you can add the optional maple syrup at this stage, along with the vanilla extract and a pinch of salt.
- Mix: Mix everything together, and let it cook for about 4-5 minutes, or until the oatmeal reaches your desired consistency. If you prefer a thinner consistency, feel free to add more almond milk.
- Prepare the Raspberries: While your oatmeal is cooking, prepare the raspberries. Simply place them frozen in a mug, pour boiling water over them, and then drain. This will thaw the raspberries slightly, ensuring they are still cold but not frozen.
- Top it Off: Once your oatmeal is ready, it's time to assemble your breakfast bowl. Spoon the creamy oatmeal into your serving bowls. Then, generously top it with the thawed raspberries and a dollop of peanut butter.
