Nasi Goreng Cauliflower Rice

Enjoy a light yet flavourful twist on a classic with this Vegan Cauliflower Rice Nasi Goreng. Made with PACK'D organic cauliflower rice and petit pois, this quick and nutritious dish is packed with fresh veggies, soy sauce, and a touch of spice. Ingredients
- 1 tbsp light olive oil or groundnut oil
- 1 medium onion, finely chopped (90g)
- 1 medium carrot, cut into matchsticks (120g)
- 1 red pepper, diced small (85g)
- 1 red chilli, finely sliced
- 2 garlic cloves, minced
- 1 bag PACK'D organic cauliflower rice, thawed
- 2 tbsp soy sauce
- 1 tsp maple
- 1 tbsp tomato puree
- Salt and pepper to taste
- 1/3 cup / 40g PACK’D organic petit pois
Garnish
- 3 spring onions (30g), finely sliced
- Lime wedges
Method
Heat the oil in a large non-stick frying pan or wok. Add the onion, carrot and peppers and cook on a medium heat for 3 mins until slightly soft. Add the chilli and garlic for 30 seconds until fragrant.
Add thawed cauliflower rice to a muslin cloth of strong kitchen roll and squeeze out the water. If your rice is frozen, microwave for 5 mins first then squeeze out the water. This will make the Nasi Goreng fluffy and not soggy!
Mix soy sauce, maple, tomato pure, salt and pepper
Add cauliflower rice (water removed) to the carrot mix with the sauce and the peas and cook for about 3 - 5 mins until cooked to your liking and the peas are cooked through. Adjust seasoning to taste.
Serve with spring onions and lime wedges.
