Lemony Spinach Orzo Salad

Combining the goodness of PACK'D Organic frozen Spinach with cherry tomatoes, green olives, pumpkin seeds, and vegan feta, all brought together with a zesty lemon dressing. Ideal for a healthy lunch or light dinner, this orzo dish will become a staple in your kitchen.

Ingredients
- 1 cup (220g) dried orzo
- 1 tbsp olive oil
- 1 garlic cloves, minced
- 1 cup (90g) frozen Pack’d Organic frozen Spinach
- 1 tbsp nutritional yeast
- 1 cup (180g) cherry tomatoes, halved
- 1/3 cup (35g) green olives, pitted + halved
- 1/4 cup (40g) pumpkin seeds, toasted
- 2 tbsp packed fresh basil, shredded
- 1/3 cup vegan feta
Dressing
- 1/4 cup (60 ml) olive oil
- 2 tsp lemon juice
- Good pinch of salt and pepper to taste
Method
Cook orzo in a pan of salted boiling water as per the packet instructions. Drain and rinse. Allow to cool. Toss with a drizzle of olive oil to prevent sticking.
Add 1 tbsp of olive oil to a non-stick pan.
Add garlic for 30 seconds - 1 minute until fragrant. Add spinach, nutritional yeast, salt and pepper and cook for 1 - 2 minutes or until the spinach is warm. Allow to cool.
Mix the dressing together in a small bowl.
Toss cooled spinach, tomatoes, olives, pumpkin seeds, basil and dressing through the orzo and top with vegan feta.
