Lemon Basil Gnocchi
This quick and delicious Gnocchi with Sautéed Broccoli is perfect for a speedy, nutritious meal. Made with PACK'D organic broccoli and fresh uncooked gnocchi, this vegan dish comes together in just 10 minutes.
Flavoured with garlic, lemon juice, and fresh basil, it's a light and flavourful option for a busy weeknight. Serve it hot and enjoy, or store leftovers in the fridge or freezer for a convenient meal later.

Ingredients
- 300g fresh uncooked gnocchi
- 3 tbsp olive oil
- 1 packet (450g) PACK'D organic broccoli
- 2 garlic cloves, minced
- Juice of 1/2 lemon, or more to taste
- 12g nutritional yeast (1/4 cup)
- 10g fresh basil, finely chopped
- Salt and pepper to taste
Method
- Heat 1 tbsp of olive oil in a non-stick pan. Sauté the gnocchi for 5 minutes, turning a couple of times until golden. Set aside
- Heat another 1 tbsp olive oil to the pan. Add garlic for 30 secs then broccoli and cook on a medium heat for 3 - 4 minutes until the broccoli is al-dente.
- Add the remaining 1 tbsp of olive oil to the broccoli and add the cooked gnocchi with salt and pepper, nutritional yeast, lemon juice, a splash of water and fresh basil.
