High fibre minty pea and quinoa bowl
Enjoy a nutrient-packed meal with this Quinoa Bowl featuring a creamy pea hummus made from PACK'D organic petit pois and chickpeas. Paired with roasted vegetables like broccoli, cherry tomatoes, and courgettes, as well as fresh ingredients like cucumber and avocado, this dish provides a perfect balance of flavours and textures.
With 15g of fibre per portion, this quinoa bowl is both hearty and healthy, ideal for a satisfying lunch or dinner. Optional toppings like walnuts and fresh mint add an extra layer of taste and crunch.
Fibre per portion (not including toppings): 15g
Ingredients (makes 2 servings)
- 80g quinoa
- 240g chickpeas
- 80g PACK’D organic petit pois
- 4 tbsp tahini
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 large clove of garlic
- 1 tbsp mint
- Salt and pepper to taste
Veg to roast:
- 250g PACK’D organic broccoli
- 150g cherry tomatoes
- 200g courgette
- 1 tbsp olive oil
Fresh veg:
- 100g cucumber
- 40g radish
- 20g spinach
- 150g PACK’D avocado
- Optional: top with walnuts and chopped mint.
Method
- Defrost the PACK’D broccoli, avocado, and petit pois. Preheat the oven to 200°C.
- Drizzle oil over cherry tomatoes, courgette, and broccoli. Roast for 25 minutes.
- Cook quinoa per package instructions.
- Blend chickpeas, petit pois, tahini, olive oil, lemon juice, and garlic until smooth. Add almond milk for a creamier consistency if needed.
- Serve pea hummus with roasted veggies, quinoa, and fresh veggies. Top with walnuts and chopped mint.
