Gut loving pasta salad

This vegan-friendly dish combines farfalle pasta with fresh vegetables, vegan feta, and a zesty homemade vinaigrette. Ingredients (makes 4 servings)
- 225g farfalle pasta
- 150g PACK’D organic sweetcorn
- 150g PACK’D organic petit pois
- ½ a cucumber, sliced
- 1 bell pepper, chopped
- ½ a red onion, chopped
- 50g vegan feta, chopped
- 150g cherry tomatoes
- 15g rocket
- 3 tbsp parsley, chopped
- 3 tbsp mint, chopped
Vinaigrette
- 30ml olive oil
- Juice of ½ a lemon
- 1 tbsp white wine vinegar / cider vinegar
- ½ tsp dried basil
- ½ tsp dried oregano
- Salt and pepper to taste
- Optional: top with pumpkin seeds and chopped mint
Method
- Cook the pasta according to the package instructions.
- Defrost the PACK’D sweetcorn and petit pois.
- Dice the peppers and onion.
- Mix the vinaigrette ingredients together.
- Mix the pasta, veggies, feta and vinaigrette together.
- Top with pumpkins seeds and serve.
