Glorious Grains Bowl Recipe

INGREDIENTS
- 2 cups (260g) Pack’d organic frozen broccoli
- 1 small courgette (130g), thin strips
- 1 tbsp olive oil
- Good pinch salt and pepper
- 1 small red onion (65g), diced
- 2 garlic cloves, minced
- 2 tbsp tomato puree
- 1/2 tsp smoked paprika
- 1 tbsp nutritional yeast
- 1/3 cup (75g) jarred roasted red peppers, sliced
- 1 packet (250g) cooked mixed grains (we used Merchant Gourmet Glorious Grains with Red Rice & Quinoa)
- 1 tbsp fresh coriander, finely chopped
Method
Preheat oven to 400F/ 200C / 180 fan and line a baking tray with greaseproof paper. Add frozen broccoli, drizzle with 1/2 tbsp olive oil and a pinch of salt. Roast for 10 minutes. Add courgette and remaining 1/2 tbsp of oil and toss with the broccoli.
Roast for a further 10 minutes or to your liking. Option to char the courgette on a griddle pan for 1 - 2 minutes per side if you want pretty grill lines!
Heat 1 tbsp of oil from the jar of red peppers in a non-stick pan. Add onions and cook for 3 minutes on a medium heat. Add red pepper for 2 minutes and garlic for 1 minute and then the grains, tomato puree, paprika, nutritional yeast and a good pinch of salt and pepper. Cook for 2 - 3 minutes on a medium / low heat until fragrant.
Serve grains with fresh coriander, broccoli and courgettes.
