PACK'D 2 person summer crumble

Treat yourself to a quick and comforting dessert with this easy Vegan Summer Fruit Crumble. Made with PACK'D organic summer berries and a delicious oat-based crumble topping, this dessert is ready in just 15 minutes. Perfect for two, this recipe combines the tartness of summer berries with the warmth of cinnamon and vanilla, baked to golden perfection. Enjoy it with a dollop of vegan yoghurt or ice cream for an extra indulgent treat. Store leftovers in the fridge for up to 2 days or freeze for up to 2 months.

Ingredients

Crumble

  • 25g butter, cold and cubed
  • 40g plain flour
  • 30g porridge oats
  • 1 tbsp maple syrup
  • 1/4 tsp vanilla extract
  • 1/3 tsp cinnamon powder
  • Pinch of salt

Method

Preheat the oven to 200C / 180 fan and grease two 10 w x 7cm D ramekins with vegan butter.

Add flour, oats, maple, vanilla, cinnamon and salt to a bowl and rub through the butter until chunky.

Run the frozen berries under warm water to slightly thaw. This will make the base juicer and more moist. Add to base of the ramekins. Option to stir through with some maple if you prefer things sweeter.

Top the berry bases with crumble and place on a baking tray. Bake in the oven for 8 - 12 minutes until slightly bubbly and golden on top.

Serve with vegan yoghurt or ice cream.
