10 minute strawberry and coconut morning oats
The days are getting lighter but still not too warm and therefore still perfect porridge weather. This recipe is a hearty and satisfying breakfast for all the family, especially those wanting to glam up their porridge (we would recommend organic oats for use in this recipe) . A wholesome, dairy free version of a staple. Enjoy!

Ingredients
- 2 cups oats
- 2 cups almond milk
- 1/2 tsp vanilla extract
- Optional 1 tbsp maple, or to taste
- 1/4 cup coconut yoghurt
- 1 cup Pack’d frozen strawberries
- 1/4 cup toasted coconut chips
Method
Add the oats, almond milk and vanilla to a bowl and stir to combine. Option to add maple if you like.
Leave to stand for 10 minutes and stir through the coconut yoghurt.
Add frozen strawberries to a mug and pour over boiled water. Drain.
Top oats with thaw’d strawberries and toasted coconut chips.
